Today's lunch could have been more flavorful if I'd taken a few additional steps, I'm sure. But I'll be damned if I'm not getting, like, 300% of my vitamins today:

Kale, sautéed in olive oil with garlic and onions; organic whole wheat couscous topped with vegetable broth and peas; clementines (which apparently ceased to be seedless in 2006 due to bees cross-pollinating them with other fruit, says Wikipedia); and blueberry green tea.







Next, I want to make my own marinara sauce and freeze it. I eat spaghetti pretty often and would prefer to do without all the sugar and other unnecessary stuff that's usually in it.

I have a lot to do, but strangely feel as rejuvenated as if it were New Year's Day. Let's hope that attitude doesn't disappear as soon as I start my school work.

if you're looking to ban refined sugar from your menus,

i'd like to recommend agave nectar as substitute?

i've started using it in some of my cooking, and i have to say its really really good :x

Oh delicious! I just made couscous with dinner this evening. And, I've been using kale in soups. I'll have to try to mix the two! I've done spinach. But, that looks lovely!
I could eat ten clementines in a row. Hehe The last few batches I've had either have one or two seeds per clementine or none at all! Hmm.. That is interesting though!
How was the tea? I don't always like the strawberry or berried types. But, that sounds lovely!

also i wanted to say that your vegetarian meals always look so tasty. you must have like the best hair and skin from all the vitamins!
